Maine Blueberry Overnight Oats Base Recipe

 


I just got back from a beautiful week camping in Maine. We stayed in Camden, Acadia National Park and Kennebunkport. We were lucky because we got to Maine just in time to enjoy fresh picked wild blueberries from the local farm stands. Also, my youngest daughter discovered she loves overnight oats that I had made for our first morning. The blueberries added to the overnight oats made a winning combination and great breakfast to make at our campsite.


I was able to easily continue to prep her oats every night in a mason jar by following a basic formula. There are lots of recipe variations online, but I wanted to share the base that's easy to memorize because it can be a healthy breakfast option for busy mornings. The oats are high in fiber which is good for heart health and blood sugar balance, and they provide protein too. The flax, hemp and chia provide healthy Omega-3 fats.


Once you figure out how you like them, make several jars at a time and have breakfast ready to go for days. It can also be warmed up on chillier mornings.


If you see wild Maine blueberries in the frozen fruit section, try them! They are perfect for this recipe because they are so tiny. If not, use blueberries you have (fresh or frozen).


Maine Blueberry Overnight Oats


1 serving per jar (may be two servings for smaller kiddos)


1/2 cup rolled (old-fashioned oats)


1/2 teaspoon cinnamon


1 teaspoon ground flax or hemp seeds


1 teaspoon chia seeds


1 cup non-dairy milk (we used soy which adds protein)


1 teaspoon maple syrup


1/2 cup blueberries


Put oats, cinnamon, flax or hemp, chia in a pint size mason jar & stir.

Add the milk, blueberries, maple syrup and mix. Put on lid and keep in refrigerator overnight.

In the morning, add more toppings like chopped almonds or sunflower seeds and enjoy!

Once you have the base down you can play around with different ingredients and toppings. Here are a few ideas:


Swap out blueberries and add:


tbsp peanut butter and add sliced bananas


tbsp peanut butter and a tbsp fruit jam


Top with fresh raspberries and shredded coconut


Swap 1/4 cup milk for 1/4 cup of your favorite yogurt


The options are endless! Use the base recipe and get creative!
