 My daughter was curled up in bed this morning. I asked her if she was cold, and she said "I just love feeling cozy under my blanket". Who doesn't like to feel cozy? I think these recipes with warm you up like your favorite blanket as the weather gets chilly.

Pumpkin Spice Oatmeal

Oats are a fall breakfast staple that can be easily elevated with seasonal flavors like pumpkin spice or cinnamon. Packed with fiber and heart-healthy nutrients, oats are a great way to start your day. To make this delicious dish, cook rolled oats with oat milk or water, stir in pumpkin puree, a touch of maple syrup, and a generous sprinkle of pumpkin pie spice. Top with chopped nuts and dried fruit for added texture and flavor.

Apple Cinnamon Quinoa Porridge

If you're looking for an oatmeal substitute that is also gluten-free, try this warm quinoa porridge. Quinoa is an excellent option for vegetarians and vegans since it is a complete protein, including all nine important amino acids. Quinoa is prepared by cooking it with almond milk, sliced apples, cinnamon, and a little bit of honey. For a filling, protein-rich breakfast, top with sliced almonds or walnuts and a dollop of Greek yogurt.

Sweet Potato and Spinach Frittata

Warm Pear and Almond Breakfast Bake (can double as a dessert too)

This breakfast bake combines the flavors of tender pears and crunchy almonds for a perfect fall morning treat. Slice pears and layer them in a baking dish. Mix almond flour, ground flaxseed, cinnamon, and a touch of brown sugar, then sprinkle the mixture over the pears. Bake until the pears are tender, and the topping is golden brown. Serve with a dollop of yogurt or a drizzle of maple syrup for added sweetness.

Savory Mushroom and Swiss Chard Strata

A strata is a delicious and versatile dish made from layers of bread, eggs, and various fillings. This savory mushroom and Swiss chard version is perfect for fall, combining earthy flavors with nutritious greens. Sauté sliced mushrooms with garlic and onion, then add chopped Swiss chard and cook until wilted. Whisk together eggs, milk, salt, and pepper in a separate bowl. Layer cubes of whole-grain bread in a baking dish, followed by the vegetable mixture and shredded cheese. Pour the egg mixture over the top and let sit for a few minutes to allow the bread to soak up the liquid. Bake until golden and set.

Easy summer dinner (no cooking required) for women in their 40s
